Ever heard of “Beer Butt Chicken” ? It is the easiest way to bbq chicken and not dry it out because it marinates with the beer from the inside out!
Just take a whole chicken rub it down with your favorite spices, I prefer the McCormick’s Chicken grill rub, open a can of beer, stick the can into the body cavity, open side up, and place on the grill sitting upright. cook for about 2 hours with medium direct heat or until its done throughout. they even make little stands that make it a lot easier for it to sit upright. You can get the stands from Cabela’s online or any other sporting good stores.
It sounds very redneck but it is oh so good because the beer keeps the chicken from drying out.
Ive also done turkeys like this, you just have to use one of the big 24 oz cans of beer instead of the normal 12 oz can
You have a few ways to go:
1) If you have a rotisserie spit, put the whole checken on it & baste.
2) Wrap chicken pieces in foil with lemon & onion slices.
3) Put charcoal on one side of grill, chicken pieces skin down.
When nicely golden, flip over to over side of grill & close the lid.
The indirect heat will cause the juices to run down on the meat.
For the last few minutes, you can brush with BBQ sauce.
